Preparation:
Make sure that the tofu is nice and dry. You can remove it from the package and then place it on a slightly tilted plate. Cut the tofu into triangular pieces, about 1 or 1 1/2 inches on a side. Heat the peanut oil - very hot - for deep frying. Fry tofu until golden brown, remove, and drain on a paper towel. Try to keep these warm while you make the sauce.
SAUCE: In a small saucepan, heat the vinegar, sugar and salt until thickened. Remove from heat and add chilies. Arrange fried tofu on a plate. Stack 'em high! Pour some of the sauce over the tofu and serve the remainder as a dipping sauce. Finish with a sprinkle of green onion.
