Preparation:
Clean fat off beef tripes and cut into small cubes. In a large pan, cover and simmer for approximately 3 hours or until tender. Add all spices and chili powder, salt and pepper to taste. Add hominy and simmer for 30 more minutes. Serve with corn tortillas, guacamole salad, lemon and chopped onions. Can add pigs feet with tripe and cook until tender. |
