Preparation:
Cream together shortening and brown sugar; beat in egg and mix well. Sift flour, salt and soda together. Add to creamed mixture alternately with undiluted orange juice concentrate still frozen. Stir after each addition.
Quickly stir in pecans and undrained pineapple. Bake in greased 9X5 loaf pan at 350 degrees for 50 to 60 minutes. Cool on rack. |
