Preparation:
Place egg, orange juice, sugar, and butter in bowl. Attach bowl and wire whip. Turn to speed 4 and whip 30 seconds. Stop and scrape bowl.
Combine flour, baking powder, soda, salt, and orange peel. Turn to speed 2 and add flour mixture, mixing about 15 seconds. Stop and scrape bowl. Add buttermilk. Turn to speed 4 and whip 20 seconds. Reduce to stir speed and quickly add pecans, mixing just until combined.
Spread batter in a greased and floured 9x5x3-inch loaf pan. Bake at 350 F for 55 to 60 minutes. Remove from pan and cool on wire rack. |
