Preparation:
Brown ground beef with chili powder, cumin powder, and half of chopped onions. Mix cornmeal, flour, salt, baking soda, cooking oil, eggs, milk, corn, peppers, cheese, and onions well in a large bowl. Heat large iron skillet in 400-degree onion until hot. Pour 1/2 of cornmeal mixture into skillet. Add meat mixture. Drain beans and pour them over meat mixture. Add the remaining cornmeal mixture. Bake at 400 degrees for 30 minutes. *** This can be made in a 9 X 13 inch pan. Do not preheat it in the oven. |
