Ingredients:

8 large firm ripe tomatoes
1/4 cup chopped parsley
1 clove garlic -- crushed
1 teaspoon Salt
1 teaspoon granulated sugar
1/4 teaspoon pepper
1/4 cup olive oil
2 tablespoons vinegar
2 teaspoons prepared mustard
 

Preparation:

Slice tomatoes into thick, even slices; set aside. Combine remaining ingredients in small jar; shake well. Layer tomatoes in shallow dish, covering each layer with dressing. Cover lightly. Let stand at room temperature at least 20 minutes. Chill and serve.
