Preparation:
Preheat oven to 375 F. Spray eight-inch square baking dish with cooking
spray.
Press zucchini between paper towels to remove excess moisture.
In a large bowl, combine zucchini, tomatoes, oats, Parmesan cheese, egg and
pepper; mix well. Place in sprayed baking dish.
Top zucchini mixture with mozzarella cheese; cover loosely with foil. Bake
30
minutes.
Remove foil. Bake an additional 15 minutes, or until heated through.
