Preparation:
Very finely chop the vegetables and mince the garlic. Combine the tomato juice, oil, lemon juice, salt and pepper and mix with the chopped vegetables. One-half of the mixture may be pureed and then mixed with the finely chopped veggies and hot pepper flakes - no problem with not pureeing any of the veggies as this gives a good texture and the taste is good. Refrigerate several hours prior to serving. |
