Hot Artichoke Dip |

Ingredients:

tortilla chip strips (for dipping) |

crudites (vegetables for dipping: carrots, celery, cauliflower, broccoli, etc.) |

marinated artichoke hearts |

ounces |
mild green chiles |

ounces |
chopped pimentos |

La Victoria salsa (or equivalent) |

cilantro |
1/2 |
cup |
grated Jack or cheddar cheese |

tablespoons |
mayonnaise (optional) |

tablespoons |
sour cream (optional) |

Preparation:
Drain and chop Artichoke hearts, mild green chiles and pimentos.
Combine above ingredients in a large bowl. Add salsa to taste, add mayonnaise
and sour cream. Place in a small casserole dish or quiche dish. Top with grated cheese and microwave covered 4 to 6 minutes until bubbly. Garnish with sour cream, cilantro and olives.
Serve with tortilla strips and crudités or fill cooked artichokes with hot dip. |
