Lemon Tofu Cheesecake

Serves: 1 cake
 

Ingredients:

1 tablespoons lemon juice
2 tablespoons cornstarch, dissolved in 2 Tbsp. water
1 pound firm, silken tofu
1 teaspoon vanilla
1/3 cup sugar
1/2 teaspoon lemon zest
1 tablespoons tahini
1/2 teaspoon almond extract
1/2 teaspoon salt
 

Preparation:

Blend all ingredients in blender until very smooth. Pour into pie crust of your choice. Bake at 350° for 30 minutes. Cook and serve with a fruit topping.
