Ingredients:

ground beef, round, chuck, or sirloin |

white bread crumbs (about 4 slices of bread) |

eggs, slightly beaten |

onion, finely chopped |

diced tomatoes |

uncooked bacon |

teaspoon |
salt and pepper to taste |

Preparation:
To prepare bread crumbs: heat oven to 250F and place 4 slices of white bread in oven to dry out. When bread is completely dried, crush with your hands or a rolling pin into crumbs. Place in bowl and set aside.
Preheat oven to 350F for the meat loaf. Lightly oil a glass baking dish or a loaf pan. Combine meat, salt and pepper, onion, eggs, bread crumbs in mixing bowl. Drain 3/4 cup of juice from canned tomatoes and add to the mixture. Mix all ingredients thoroughly with hands. Form meat mixture into a loaf and place in glass pan OR pack the mixture into a loaf pan. Top with diced tomatoes and 4 strips on uncooked bacon. Bake in oven 45 minutes. |
