Preparation:
Kabobs:Mix all the ingredients of the marinade and toss the vegetables and tofu in it.Adjust seasoning.Let sit for an hour or two.If using bamboo skewers,soak in warm water for a while.Skewer the vegetable pieces and tofu,brush with the marinade from time to time and grill till they are browned on all sides.Can be done in the oven broiler too.Once they come out,season with salt and pepper.Serve hot over a bed of jasmine/basmati rice.Pour peanut sauce over the kabobs.
Peanut sauce:Heat all ingredients over medium heat in a sauce pan,stirring constantly till thick. |
