Cafe San Pasqual's Three-Chile Salsa

Ingredients:

3 medium guajillo chiles -- dried
3 medium chiles de arbol -- dried
1 medium fresh jalapeno -- green
1/3 pound tomatillos
1 medium tomato -- ripe
2 tablespoons onion -- roughly chopped
2 cloves garlic
1/4 teaspoon cumin
1/4 teaspoon cloves
1/4 teaspoon Mexican oregano
1/3 teaspoon salt
 

Preparation:

Combine chiles and dry ingredients and roast in hot frying pan for 1-2 minutes. Place 1 cup of water in sauce pan and add all ingredients and cook uncovered for 10-15 minutes. Transfer to blender and puree into a smooth sauce. Serve at room temperature.
