King Khofa's Lamb Tagen

Ingredients:

1 pound good quality diced lamb
1/2 cup chopped onion
1 clove garlic
1 teaspoon chopped mixed red and green chillies
1 can peeled tomatoes
1 teaspoon paprika
1 teaspoon ground coriander
1 cup okra -- (ladies fingers)
1 cup water
 

Preparation:

Fry the onion, garlic and chillies gently until soft. Add the diced lamb and the tomatoes and simmer for 5 minutes. Add the paprika and coriander, plus the water, and simmer for a further 20 minutes. Then add the okra and cook for 10 minutes. Serve garnished with a sprinkling of parsley.
