Preparation:
Mix all ingredients in a large, heavy saucepan over medium-high heat. Bring slowly to a boil. Lower heat to a simmer and cook, uncovered, until almost all liquid has evaporated, 30 to 40 minutes; watch carefully. In you taste relish while it is still warm, flavor may seen extremely sharp or acid. Do not worry; cooled relish will become milder. Transfer to a serving bowl. (Relish can be made 4 to 5 days ahead; cover and refrigerate.) Serve at room temperature. Makes 3 cups. |
