Preparation:
In small bowl, whisk oil, vinegar, mustard, salt and pepper; set aside. Arrange lettuce, snow peas, red pepper and mushrooms on 6 individual salad plates; set aside.
Grill chicken 6" from heat source for 10 to 15 minutes or until done, turning once.
Diagonally slice chicken breasts and arrange on each salad.
Serve with vinaigrette.
