Grilled Chicken Ribbons

Ingredients:

1/4 cup olive oil
2 tablespoons lemon or lime juice
3 cloves garlic
1 teaspoon honey
3/4 teaspoon dried thyme -- crushed
1 teaspoon red pepper flakes
1 teaspoon salt and pepper to taste
4 medium chicken breast halves boneless and skinless
 

Preparation:

In a small bowl, combine all ingredients except chicken; mix well. Cut chicken lengthwise into strips about 1 inch wide. Thread chicken onto 8 skewers; brush generously with sauce mixture. Grill chicken over hot coals, covered, 3 to 4 minutes on each side or until chicken is cooked through, basting with sauce once or twice. Discard remaining sauce.
