Preparation:
Prepare grill or preheat grill. Put chicken in a bowl and pour Passion Fruit Vinegar over chicken. Add tarragon and turn breasts until well coated.
Oil grill rack and cook chicken over medium heat with no flame. (If the fire is too hot, the sugar in the vinegar will burn instead of caramelize.) Grill on one side until brown, about 5 minutes.
Turn and baste with Passion Fruit Vinegar. continue to cook until done, about 5 minutes more.
Pass more Passion Fruit Vinegar as a sauce.
