Red Chile Marinade

Serves: 3 cups
 

Ingredients:

8 medium dried ancho chilies -- seeded, toasted, and ground
1 small onion -- coarsely chopped
10 cloves garlic
3 medium canned chipotles -- chopped
1 cup fresh orange juice
1 teaspoon salt -- to taste
1 teaspoon freshly ground black pepper -- to taste
1 cup extra virgin olive oil
1/4 cup fresh mint chiffonade
 

Preparation:
