Preparation:
Grate the orange and lemon zest. Blend together the zest and juice, oil and mustard. Pour the marinade over the steaks in a shallow dish and marinade for 1 hour.
Meanwhile blend the butter and seasonings. Place on a sheet of foil and roll up in a log. Chill until firm then cut into 8 rounds.
Drain and grill the steaks 4-5 min per side over high heat, basting occasionally with the marinade.
Serve with the cilantro butter rounds. |
