Preparation:
In a small sauce pan over medium heat, heat oil until hot but not smoking.
Add onions and sauté, stirring occasionally, until translucent, 5 to 7 minutes.
Add ginger and garlic and sauté, stirring for 1 minute.
Add rum, vinegar, ketchup, molasses, sugar, allspice, mace and salt and pepper and bring just to a boil.
Remove from heat. Best if made a day ahead of use. |
