Preparation:
In saucepan combine wine, sugar, cinnamon, coriander, cloves and rind. Bring to boil. Add pears. Reduce heat. Simmer just until tender, about 8 minutes. Remove pears with slotted spoon. Core from bottom if desired. Place pears upright in 4 sherbet-type glasses or bowls. Mix together cognac and chocolate sauce. Pour sauce around pears. Garnish with mint if desired.
