Preparation:
Heat oil in frying pan. Add peppers and onion. Cook, without browning, for about 2-3 minutes. Add potato, tomatoes, black olives, salt and pepper. Cook 3-4 minutes stir occasionally. Stir in chives. Turn heat to medium and add eggs. Stir gently as they begin to cook. Let them set until firm. Sprinkle on cheese. Add more salt and pepper to taste. Serve, cut into wedges. |
