Preparation:
1. Line a greased sandwich tin with rolled out pastry.
2. Spread with apple. Then spread jam over apple.
3. Gently cream sugar with butter. Gradually add egg and flour alternatively, beating all the time. Add almond essence. The mixture should have a good soft dropping consistency. Add a little milk if necessary.
4. Spread sponge mixture over flan and bake at 180 øC for 35 mins. Serve hot or cold with custard or cream.
