An outstanding salas that is "onion-less", for those who don't want to sacrfice the joy of salsa but may not want the challenges of onions (before, during and after!) Make it fresh - it will store covered if refrigerated for at least a week. Salsa
 

Ingredients:

1 can whole tomatoes
5 medium tomatoes
5 medium jalapeno peppers
1 bunch cilantro
12 ounces green chiles
1/2 tablespoons salt
1/2 tablespoons sugar
1/2 teaspoon cumin
 

Preparation:

In a food processor, process with the steel blade the canned tomatoes, jalapenos and cilantro until finely chopped. Core fresh tomatoes, cut into 1" pieces and add to mixture; pulse processor until salsa reaches desired consistency. Add canned green chiles, cumin, salt and sugar. Pulse just until well blended. Serve immediately or refrigerate; garnish with fresh cilantro and serve with fresh tortilla chips.
