Preparation:
Fry the bacon until crispy and put aside- crumble when cooled. Slice mushrooms and fry in the bacon grease (use extra butter if your bacon was a little lean) until they have soaked it up and have a nice golden look about them. Slice the rib roast most of the way through the middle so that you can "unfold" it into a rectangle (either vertically or horizontally pending on the cut you got). If it was already "rolled" in the store you won't have to cut it, just unroll it. Coat the roast with the bacon, mushrooms, scallions and sprinkle with garlic/onion powder and whatever other spices you want to add. Roll it up like a jelly roll and tie it up with cooking string in at least 3 places to hold it together. Bake covered in a SLOW oven 250 degrees for 3 to 3-1/2 hours or until done.
