Preparation:
combine beef and water to cover in a stockpot, over a moderate flame bring to a boil, reduce heat, and simmer for 2-3 hours, until fork tender
remove meat from liquid with a slotted spoon drain well and keep warm simmer vegetables separately in cooking liquid, until tender slice beef, across the grain serve hot, garnished with vegetables, and accompanied by horseradish, horseradish sauce, or hot mustard |
