Preparation:
Add oil to taste for all bullet points
boil rice and cool
 Pour egg into oil and cook 20 – 30 sec, remove to bowl and break up into small pieces with fork or spoon
 Fry meat in hot wok 1 – 2 mins MAX, remove to bowl with egg
 Add red curry paste, curry powder, garlic and ginger - stir for 30 – 40seconds
 Add carrots, stir 1 min, add onion stir 1 min, add beans and asparagus stir 1 min
Add sugar, salt, pepper, oyster sauce and plum sauce
Add rice and soy sauce stir until hot
Return meat and egg, season again if necessary with salt, pepper and soy
Garnish with spring onions and cashews
