Preparation:
Preheat the oven to 375.
In an electric mixer, cream together the butter and sugar. Add the eggs and chopped green chiles. Add the corn, cheeses, flour, cornmeal, baking powder, salt, and milk, and mix until blended.
Divide the muffin dough in 12 pieces and place them in a well-greased, 12 muffin pan. Bake in the oven for 35 to 40 minutes or until a cake tester (toothpick!) comes out dry. Turn the muffins out onto a rack to cool. |
