Preparation:
Coat 1 3/4 inch mini muffin cups with cooking spray; set aside. In mixing bowl, combine flour, cocoa powder, sugars, baking powder, baking soda and salt. Stir in banana, Lighter Bake, eggs and vanilla, mixing until blended. Stir in chocolate pieces and walnuts. Spoon batter into prepared muffin cups. Bake in preheated 350 degree oven for about 15 minutes or until springy to the touch. Makes 42 mini muffins |
