Preparation:
* Fruit ideas: 2 cups blueberries with or without almond extract; 12 ounce package of cranberries with 2 tablespoons orange rinds; grated carrots with nuts and allspice; blueberries and bananas.
Combine all dry ingredients except baking soda. Combine baking soda and buttermilk. Add applesauce, Eggbeaters, molasses and beat well. Make a "well" in the dry ingredients, pour in liquid mixture and mix together. Stir in fruit. Bake at 375 degrees for 20 - 22 minutes. May store batter in container in the refrigerator for 6 - 8 weeks, or bake the entire batch and freeze muffins for later use. |
