Preparation:
Blend sugar, flour and salt in a small bowl until free of lumps. In a medium bowl beat egg yolk. Gradually blend in milk, lemon juice, lemon peel and sugar mixture. In a small bowl beat egg white until stiff but not dry. Fold egg whtie into yolk mixture until blended but not quite smooth. Divide evenly between two ungreased 1 cup baking dishes or 10 ounce custard cups. Place in a pan of hot water 1 inch deep. Bake in a gas oven at 325 degrees F. for 45 to 50 minutes. Serve warm, topped with whipped cream, if desired. |
