Preparation:
1. Place bread cubes in large bowl; sprinkle with grated lemon peel and salt.
2. Heat milk and sugar just to boiling in a saucepan; add butter, stirring to melt.
3. Pour milk mixture over bread; cool.
4. Beat egg yolks and add to cooled bread mixture; add lemon juice.
5. Beat egg whites until stiff, but not dry; fold into bread mixture.
6. Pour into greased 1 1/2-quart baking dish; sprinkle with confectioners' sugar.
7. Place dish in pan of hot water; bake in preheated 350 F. oven 1 hour, or until knife inserted into pudding comes out clean. Serve warm or col |
