Sticky Date Pudding

Ingredients:

1 cup brown sugar
2 cups boiling water
2 Tablespoons unsalted butter
1 cup sugar
1 cup all purpose flour
2 teaspoons baking soda
1 cup chopped walnuts
2/3 cup milk
1 cup dates -- finely chopped
1/8 teaspoon salt
2 cups whipped cream
 

Preparation:

Preheat oven to 375°F. Combine first 3 ingredients in a nonreactive saucepan over medium high heat. Boil 5 minutes. Transfer to a 9x13 inch baking dish. Combine remaining ingredients, except whipped cream, in a food processor or bowl. Mix well. Drop by teaspoonsful into syrup and then onto a buttered cookie sheet. Bake 25-30 minutes until bubbly. Serve with whipped cream.
