Preparation:
Heat oil in 6-quart pressure cooker. Brown rabbit on all sides. Remove rabbit and reserve. Add onion, carrot, and garlic to pressure cooker. Saute until tender. Stir in flour, thyme, and marjoram. Saute 1 minute. Stir in wine, prunes, and tomato paste. Return rabbit to pressure cooker. Close cover securely. Bring pressure up to 15 pounds and cook 6 minutes at that pressure.. Let pressure drop of its own accord. Season to taste. |
