Preparation:

Combine the mayonnaise and 1/2 cup of the salsa. Let stand 1 hour in the refrigerator for the flavors to combine.
Grill, broil, or saute the chicken breasts. Spread the bread with the salsa mayonnaise. Place the chicken breasts on the bread, top with cheese, and melt under the broiler.
Serve open-face with shoestring potatoes and a dollop of salsa fresca.
Notes: This is the "Big Mac" of Cafe Terra Cotta. We have thought often that we should have some type of golden arches to announce the number we have sold over the years. We grill the chicken breasts because grilling gives them the best flavor; but you can cook them under the broiler or even in a saute pan if that is convenient. |
