Mushroom Bagel Sandwiches with Curry Mustard Sauce

Ingredients:

3 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon Worcestershire sauce
1 clove garlic -- pressed
1/8 teaspoon salt
1/8 teaspoon dried oregano
1/8 teaspoon dried tarragon
1/8 teaspoon pepper
1 dash hot sauce
16 ounces sliced fresh mushrooms
1 small purple onion -- thinly sliced
6 pieces bagels -- sliced
2 cups shredded Swiss cheese
---Curry-Mustard Sauce
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
3/4 cup milk
1/2 cup chicken broth
2 tablespoons dry sherry
2 teaspoons Dijon mustard
1 teaspoon curry powder
 

Preparation:

Whisk first 11 ingredients in a large bowl. Add mushrooms and onion, tossing to coat. Arrange bagels, cut side up, on a baking sheet; top bagels evenly with mushroom mixture, Curry-Mustard sauce, and cheese. Bake at 350 degrees for 10 to 15 minutes or until bubbly. Curry Mustard Sauce: Melt butter in a small saucepan over medium heat. Whisk in flour, and cook 1 minute, whisking constantly. Whisk in milk and remaining ingredients; cook, whisking constantly, 1 to 2 minutes, or until mixture is thickened. Makes 1 1/3 cups.
