Fruited Velvet Ice Cream

Ingredients:

1 1/2 quarts light cream
1 cup eggs -- beaten
1 1/2 cups sugar
1 teaspoon vanilla
1/2 cup chopped nuts
1/2 cup diced banana
1/2 cup drained diced pineapple -- (canned)
1/2 cup chopped fresh strawberries
1/4 cup sugar
2 teaspoons fresh lemon juice
1/2 teaspoon salt
 

Preparation:

Combine cream, eggs and 1 1/2 c. sugar. Cook over very low heat, stirring constantly, until mixture coats the back of a metal spoon. Cool quickly in refrigerator. Add vanilla. Pour into freezer can; fill 2/3 full. Combine nuts, fruits, 1/4 c. sugar, lemon juice and salt. Let stand 5 minutes. Add to mixture in freezer can. Freeze according to manufacturer's directions. Ripen 4 hours. Makes 1 gallo
