Ingredients:

4 pounds boneless pork
1 cup rice vinegar
1 cup soy sauce
1 teaspoon pepper
1/2 teaspoon kosher salt
1 teaspoon garlic
1 piece bay leaf
4 pounds boneless chicken
1/2 pound button mushrooms
6 cups cooked rice
 

Preparation:

combine ingredients except chicken and mushrooms in a large saucepot, over a medium-low flame heat to a boil, reduce heat, cover, and simmer for 30 minutes add chicken pieces and stir to mix well cover and simmer for 20 minutes add mushrooms and stir to mix well cover and simmer for 5 minutes remove from heat to a serving bowl serve hot, with hot cooked rice
