Preparation:
combine shrimp, soy sauce, rice wine, ginger, and garlic cover and chill overnight line a wok or heavy skillet with heavy duty aluminum foil combine tea leaves, sugar, orange zest, and lemon zest and place in wok place wire rack in wok or skillet to sit 1-1/2 inches above tea mixture place wok over a high flame place shrimp onto rack when mixture begins to smoke, cover tightly with a lid or foil tent smoke for 5 minutes remove from heat and let rest for another 5 minutes without lifting lid serve warm or chilled |
