Ingredients:

     1/2           cup  creole mustard
     1/4           cup  sweet paprika
  1           teaspoon  cayenne
     1/2      teaspoon  salt
     1/4           cup  fresh lemon juice
     1/4           cup  vinegar
  1                cup  peanut oil
  1                cup  olive oil
  1                cup  celery
  1                cup  scallions
  1                cup  sweet red onion
  1                cup  parsley
  1           teaspoon  ground tarragon
  4             pounds  tiger prawn
  8             quarts  water
 

Preparation:

Combine mustard, paprika, cayenne, salt, lemon juice, and vinegar in a food processor with machine running, add peanut and olive oils in a thin-steady stream process until thickened stir in scallions, onions, celery, parsley, and tarragon, set aside heat water to a boil in a stockpot, over a high flame add shrimp, return to a boil, reduce heat, and simmer for 3 minutes drain well add drained shrimp to thickened sauce mixture-mix well cover and chill for 4-48 hours skewer shrimp with frilled toothpicks serve chilled or at room temperature, in prepared sauce
