Country Dijon Shrimp Saute

Ingredients:

   2      tablespoons   butter or margarine
   3      tablespoons   country dijon mustard
   1      clove         garlic -- crushed
   1      pound         fresh large shrimp peeled and split
                        -- lengthwise
   1      tablespoon    lemon juice
     1/4  teaspoon      tarragon
   2      tablespoons   minced fresh parsley
                        hot cooked rice
 

Preparation:

Melt butter in large skillet. Add garlic and shrimp. Cook over high heat, stirring constantly 1 to 2 minutes or until shrimp curl. Remove Irom heat. Stir in parsley mustard, lemon juice and tarragon. Serve immediately over rice. 4 servings
