Preparation:
dry shrimp with paper towels sprinkle with salt combine shrimp and egg white-mix well combine flour, cornstarch, and baking powder in a large bowl-mix well add shrimp mixture and toss to coat well chill for 30 minutes heat oil to 375 degrees add shrimp 4-6 at a time and fry for 2 minutes, until golden drain on a cooling rack and blot with paper towels repeat with remaining shrimp remove all but 1 tablespoon of the oil add scallions and stir-fry over a moderately-high flame for 1 minute add shrimp, sugar, and tabasco sauce-toss to coat well remove from heat serve hot, with szechuan chile sauce to the side |
