Preparation:
Set oven temperature to 400 degrees.
Slice off tops of tomatoes.
Remove inside of tomatoes, chop and mix with olive oil, basil, garlic, salt
and pepper. Spread mixture in an 8" x 8" baking dish. Place tomatoes in
baking
dish and add to inside of each tomato: 6 baby shrimp, a cracked egg, salt,
pepper and parmesan. Bake approximately 25-30 minutes. Place on a plate over
a
small bed of spinach leaves. Serve on same plate - fruits, or melons in
season
such as slices of mango and kiwi. |
