Macadamia Apple Crisp

Ingredients:

     1/4           cup  all-purpose flour
     1/4           cup  sugar
     1/4           cup  brown sugar
  2        tablespoons  macadamia nuts -- chopped
     1/8      teaspoon  cinnamon
  2 1/2    tablespoons  chilled butter -- cut in small pieces
  5               cups  thinly sliced apples
  2        tablespoons  apricot preserves
 

Preparation:

Preheat oven to 375 degrees F. In a small bowl, combine flour, sugar, brown sugar, macadamia nuts, and cinnamon.Stir together. Cut in butter with a pastry blender or two forks, until mixture resembles coarse meal. Set aside. In a pregreased 8 inch baking dish, arrange apple slices. Drop apricot preserves atop apple slices by the teaspoonfuls. Sprinkle the flour mixture over the top. Bake until golden and bubbly (35 minutes). Note: This is an easy and lowfat dessert, great for winter nights. If you like, serve with frozen yogurt or ice cream.
