Grandma Evelyn's Crisp Oatmeal Wafers

Ingredients:

  1 1/2           cups  rolled oats
     1/2           cup  sugar
     1/2           cup  melted shortening or salad oil -- cooled
  1                     egg -- beaten
     3/4           cup  sifted flour
  2          teaspoons  baking powder
     1/4      teaspoon  salt
  5          teaspoons  milk
  1 1/2      teaspoons  vanilla
 

Preparation:

Combine rolled oats and sugar. Then stir in shortening and egg. Sift together flour, baking powder, and salt, and add alternately with combined milk and vanilla to first mixture. Drop by teaspoonfuls 2" apart o ngreased cookie sheet. Flatten to 1/8" thickness with spatula wet in cold water. Bake in oven of 400F for 10 minutes. Remove from sheet while wafers are hot. Makes 30.
