1 cup butter
2 teaspoons vanilla
2 eggs

4 cups grated apple
1 cup walnuts
Preparation:
Mix dry ingredients; add butter, eggs, sugar substitute, and blend well. Stir in grated apples and nuts. Bake in well-greased 9 x 13 pan at 375 degrees, 40-50 minutes.
