   2      cups          Carrots -- grated
   1      cup           Crushed pineapple -- drained &
                        - unsweetened
     1/2  cup           Raisins
   8      ounces        Yogurt -- plain & lo-fat
   7                    Lettuce leaves -- optional
 

Preparation:

Combine carrots, pineapple, and raisins; mix well. Chill for 2-3 hours Stir in yogurt, and serve on a lettuce leaf, if desired.
