Strawberry Soup

Ingredients:

   3      cups          sliced strawberries
     1/3  cup           grape juice
     1/2  cup           orange juice
   1      tablespoon    cornstarch
   2      tablespoons   honey
     1/4  teaspoon      cinnamon
   1      teaspoon      vanilla extract
   1      cup           plain -- low-fat yogurt
 

Preparation:

In a food processor, puree strawberries. Add grape juice, orange juices and cornstarch. Turn into a medium size saucepan. Stir in honey and cinnamon, and cook over medium heat, stirring constantly, until thickened (5-10 minutes). Remove from heat and mix in vanilla. Cool, then whisk in yogurt just until blended. Chill before serving.
