Couscous Saute

Ingredients:

                        Vegetable cooking spray
   2      tablespoons   low sodium soy sauce
     1/4  teaspoon      ground ginger
   2      cups          green pepper -- finely chopped
   1      cup           carrots -- finely grated
   2      tablespoons   firmly packed brown sugar -- * see note
     2/3  cup           boiling water
   3      ounces        couscous -- uncooked, 1/2 cup
 

Preparation:

Squirt a heavy skillet with nonstick cooking spray, add the giner and soy sauce and heat over medium heat. Add the green peppers and carrots. Cover and cook until tender, about 10 minutes. Add small bits of water or dry white wine to prevent sticking if necessary. Stir in the remaining ingredients, cover and remove from the heat. Let stand immediately. Fluff with a fork before serving.
